White Bean Hummus and Crackers

Happy Wednesday to everyone!
I came home from class to this book on my doorstep :)
I won it last week in Grettie’s giveaway and have been  counting down the days until it arrived. Kris Carr is such an inspiration and I am soo excited to read  her book. I will be sure to post a review as soon as I finish it! Until then I have two fabulous recipes for you. First, a creamy white bean hummus bursting with lemon and garlic flavor which pairs perfectly with my second recipe, crunchy flat bread crackers loaded with sesame seeds, rosemary, and garlic. If your mouth isn’t already watering just wait until you smell the fragrant crackers baking away in the oven. You can thank me later ;)
White Bean Hummus

Ingredients:

Juice of 1 lemon

2 tablespoons tahini

1/2 teaspoon dried oregano

1/4 teaspoon ground cumin

pepper

salt

1 can cannellini beans rinsed and drained

1 clove garlic peeled

Directions: Combine ingredients in a food processor and process until smooth.

Gather your ingredients

place in food processor and give a whirl

process until smooth.

Sprinkle with salt and oregano and serve with flatbread crackers.

Flatbread Crackers

Ingredients

2 cups whole wheat pastry flour

¼ teaspoon salt

2 tablespoons softened butter

1c plain almond milk

1 T sesame seeds

1 t garlic powder

1 t rosemary

Directions: Preheat oven to 300′F. Add the salt to the flour, and in a mixing bowl or food processor, cut the butter in until the mixture looks like fine breadcrumbs. Slowly mix in enough milk to form a soft, but not sticky dough.  Divide the dough into two portions and roll out one at a time, until paper thin. You can do this on a lightly floured surface, or you can do it straight onto a large, ungreased cookie sheet, as I do. This recipe makes enough for my two 10″ x 15″ trays, so divide your dough accordingly. Sprinkle with sesame seeds, garlic powder, and rosemary, bake 15 minutes or until crisp.

Combine flour, salt, butter, and milk in a bowl. Mix until just combined,

divide dough in half and roll out on your cookie sheet.

Sprinkle with herbs and score dough before baking. Pop into a 300 degree oven for 15 minutes or until crisp.

Let cool, break apart,

pile on the hummus and devour.

This looks like the perfect appetizer/snack! I love the homemade crackers, I have never tried making my own. I need to make this hummus, sound delicious! :)

Oooo congrats! What a fabulous giveaway!! I’m such a bad foodie, I have never made my own hummus yet! But with my new food processor I got for Christmas I think it is high time to check that off of my bucket list!

I made this for my son’s b’day party today! I taste tested it and it was so good – the hummus. I want to make the crackers but didn’t have time for it this weekend. :) Thanks for the great recipes.
