Chocolate Dipped Macaroons

Ooh I have another delicious Valentines Day inspired recipe for you all today! I have never tried macaroons before but for some reason I woke up this morning craving them? I’m not sure where this random craving for a luscious chocolate coconut combination came from, but I followed my instincts which lead me to this delicious outcome. Needless to say I will be following my gut more often.

Chocolate Dipped Macaroons

Ingredients:

1 C cashews

1 C unsweetened coconut

1/4 c maple syrup

1 t vanilla

1/2 T stevia powder

3 T coconut oil, melted

1 C dark chocolate chips

1 T coconut oil

1/2 t cayenne pepper

Directions: Combine coconut and cashews in a food processor and process until ground. Add maple syrup, vanilla, stevia, and melted coconut oil pulse until well combined. Press into a small pan and freeze 3o minutes. Once firmed up pull out of the freezer and cut into shapes. (I used hearts) In a small bowl melt chocolate chips with cayenne and coconut oil until smooth. Dip one end of the macaroon in the chocolate and sprinkle with more coconut shreds. Keep refrigerated.

Cashews and coconut into your food processor. Process until combined

measure out coconut oil, stevia, maple syrup, and vanilla and add to cashew mixture.

Process until everything is well mixed

press into a small pan

and pop into the freezer for a half hour until firm.

Melt the chocolate

cut out your macaroons

dip the corner into chocolate and sprinkle with coconut.

Let the chocolate harden in the freezer for a few minutes, and dig in !

I’m sure by now you probably have an idea of what I have been craving lately haha ;)

sounds and looks delicious! i especially love the lack of added sugar! only 1/2T of stevia! i’m always working to get my clients off the sugar – here’s proof you can still have a treat without mounds of sugar! nice.

ahh these Chocolate Dipped Macaroons look ahhhh-mazing! i’ve been looking for something sweet to bring into the hospital where i’m doing my dietetic internship for valentines day and i think i know what i’ll be making now! :) thanks for sharing!

just wanted to tell you that I made these and the brownies w/o the icing part and cut them out in 2′s for my son’s birthday party today… I’m not sure if I want to put them out though, they are sooo delicious!!! Love your blog!
