Polenta Cakes

Polenta Cakes with Tomato Sauce

adapted from The Vegan Table

Ingredients:

4 C water

1 1/2 C polenta

1/4 c unsweetened plain almond milk

1 tsp salt

2 T nutritional yeast

1/2 c sun dried tomatoes in oil

3 tbsp fresh parsley

1 T olive oil

1 C prepared tomato sauce

Directions: Bring water to a boil and stir in polenta, reduce heat and stir frequently until the mixture begins to thicken. Add almond milk, salt and nutritional yeast continuing to stir. After about 10 minutes, once mixture is thick add sun dried tomatoes and parsley, stir one more minute and remove from heat. Pour mixture into a greased 9×12 inch pan and pop into the fridge for a few hours until firm. Once polenta has firmed up remove from pan and cut into shapes (I used 1″ circles). Preheat 1 tbsp oil in a pan over med heat and fry circles 3-4 min per side until golden. Top with marinara, fresh parsley, and black pepper. Serve!

Prepared polenta after being refrigerated 2 hours.

Pour out and cut into circles or whatever shape you like.

Fry in 1 tbsp olive oil for 3-4 minutes on each side, until golden.

Heat up your prepared tomato sauce

and serve! Although this dish looks beautiful on the plate it tastes even better.

The polenta had a nice, crispy exterior and creamy, smooth interior bursting with flavor from the sun dried tomatoes and parsley. So delicious, Dutch quickly devoured his polenta and claimed the leftovers for his lunch.

Dutch polished off the leftovers from our Melting Pot dinner last night. He is loving the fact that I have cooked him meat two nights in a row.

Dessert was my newest obsession,

artisana coconut butter

=amazing I couldn’t wait to share my creation with Dutch, he was quite impressed ;)

OH and this arrived in the mail this morning, so ill be reviewing them here soon.

Those polenta cakes look like they’d melt in your mouth! mmmm
I’m a big outdoors fan, hence my Colorado love affair.
Hiking is probably tops, with biking in a close second.

My favorite thing to do outdoors is run! I also love skiing and biking and taking walks with my husband, J. We love enjoying the fresh air instead of a stinky gym!
