How is it seriously Friday I can’t believe how quickly this week has flown by!!
My mom and I spent her birthday doing some shopping and having lunch at FCC. I ordered a side salad with herb vinaigrette
and the Mediterranean plate which was amazing!
My mom got the tuna salad with veggies which looked delicious as well.
After shopping and lunch my grandparents came over to celebrate my mom’s birthday and we enjoyed bruschetta, grilled salmon, green bean salad, cake,
and skinny girl margaritas.
Thursday morning I woke up dying for some granola so I got to work on my newest flavor creation which might be even better than the first.
Vanilla Coconut Granola
Ingredients:
1/4 c slivered almonds
5 tbsp brown rice syrup
1 tbsp almond butter
2 tbsp coconut oil, melted
1 1/2 c oats
2 1/2 tsp vanilla extract
1/4 c coconut flakes
Directions: Combine the brown rice syrup, oil, almond butter and vanilla in a large bowl until well mixed, fold in the oats and add the rest of the ingredients stirring to coat. Once mixture is well combined pour onto a lined baking sheet and bake 22 minutes at 325 degrees stirring once. Let cool and enjoy!
I loved the sweet vanilla flavor & crunch of the coconut in this granola.
My family loved it as well and the entire batch was gone in one day!
Thursday we spent the entire afternoon shopping for wedding groceries and I don’t think we could possibly fit one more thing in the refrigerator!
When we got home from shopping and finished unloading the car my mom and I got to work on assembling margarita glasses for the party.
Which inspired us to sip on some margaritas of our own
I’m off to get to work my mom and I have a full day of cooking ahead of us and a lot of food to prepare.

This week really has flown by. I was thinking about it when I was walking into work this morning.
The Mediterranean plate looks awesome! There’s a restaurant here that has a plate like that with hummus, baba ghanouj, grape leaves and tabouli. So good!
I’ve never made food for a lot of people, but I’m not the best cook. Haha! You’ll do great! And, personally.. I would totally go for the iPhone (which I’ve been eyeing myself).

I love the fridge – mine is always packed like that and I get worried actually the food could spoil from poor air circulation…

I have made food for a 4th of july party…and it was tons of work. That was probably 5 years ago and I haven’t done it since!
I have a droid, and I like it a lot, especially the slide out keyboard. But if you are a mac person you’ll be able to sync the iphone a lot better with your other stuff!
That granola sounds great! I have a droid and I really like it. If my parents weren’t still responsible for my bill though I would have gotten the i phone
Mmm! I loooove margaritas! I have a blackberry so I have a bias towards that, BUT I would go for iphone out of the two. People are very brand loyal when it comes to this stuff, but frankly the Droid is a whole ‘nother world to me and I don’t see it as being as user friendly as the iphone. I guess I’ve never taken more than 2 seconds to play with one, but still. The iphone has great food apps!

I’ve hosted parties for lots of people, but never anything huge like a graduation or wedding. It’s so different to cook/prepare for lots of people than it is just for a few.
