strawberry rhubarb breakfast bars

I love breakfast. Dare I say it might even be my favorite meal. Regardless I am a strong believer in what you eat first thing in the morning sets the tone for the entire day. I also must eat breakfast first no matter what time I wake up even if its 4 in the afternoon. Although my typical weekday breakfasts are often eaten on the run, when the weekend comes around I always make the time for special morning meals.

Some of my favorites include:

Banana Bread Protein Pancakes

Overnight Oats

Granola

Tofu Scramble

Buckwheat Bakes

and most recently,

Simmer the fruit and sugar stirring frequently until the strawberries begin to break up and the mixture thickens, about ten minutes.

Stir in chia seeds and simmer a few more minutes, set aside to cool.

In the meantime prepare the crust, press 3/4 of the mixture into a prepared 8×8 pan

add the jam, and sprinkle with the remaining mixture. Bake about thirty minutes and slice into squares after completely cooled!

These bars were so delicious and not overly sweet which I loved, even Dutch who was skeptical of “veggies” in his breakfast inhaled his square.

Questions:

Is rhubarb a fruit or vegetable? I have read both!

These look so great….I love squares and now want oatmeal in this form…:) I seen rhubard the other day at the other store but never thought to pick any up.

Yum :) I love those bars too, but I don’t think I’ve tried a raspberry rhubarb combo. It looks delicious! I love breakfast and now I’m craving these bars even though I already had breakfast :D

My favorite meal is definitely breakfast! I love a simple bowl of overnight oats in the morning. It totally sets the tone for the entire day! :)

oh These looks wonderful! I love the combination of rhubarb and strawberries. I have no idea if they are a fruit or a veg though :)
Favotit meal today is without doubt the un-cooked chocolate cherry pancakes I made. i almost died when i ate them :D

Oh hunny bunny…..these look amazing!! I really really love summer time bars like this ;) What a great idea for a fun breakfast treat.

I seriously could eat this bar for breakfast, lunch and dessert. They look wonderful!

Breakfast would most definitely be my favorite meal if I was eating the recipes in this post every day! The banana bread protein pancakes look amazing. As do the strawberry rhubarb squares (and everything else!). :-)

I think rhubarb is a vegetable because it doesn’t have seeds…But don’t quote me on that! Either way, it’s delicious. :-)
