I love breakfast. Dare I say it might even be my favorite meal. Regardless I am a strong believer in what you eat first thing in the morning sets the tone for the entire day. I also must eat breakfast first no matter what time I wake up even if its 4 in the afternoon. Although my typical weekday breakfasts are often eaten on the run, when the weekend comes around I always make the time for special morning meals.

Strawberry Rhubarb Breakfast Bars
adapted from Oh She Glows
Ingredients:
for the jam:
1 12 oz bag frozen strawberries, defrosted
3 stalks rhubarb
2 tbsp raw cane sugar
for the bars:
2 c oats
3/4 c whole wheat pastry flour
1/2 tsp salt
1/2 tsp baking soda
1/2 c brown sugar
1 tbsp chia or flax + 4 tbsp warm water
1/2 c earth balance or coconut oil, melted
1/4 c grade b maple syrup
2 tbsp almond milk
sesame seeds or coconut for top (optional)
Directions: Add strawberries and rhubarb to a saucepan over medium heat with 2 tbsp sugar, bring to a boil and simmer 10 minutes or until mixture begins to thicken, stir in chia seeds and simmer a few more minutes, remove from heat and set aside. In a small bowl combine chia seed with water to form an “egg” set aside stirring every few minutes to thicken. In a large bowl combine oats, flour, sugar, baking soda and salt. In another bowl combine butter with almond milk, and maple syrup, add wet to dry and stir until just combined. Using 3/4 of the mixture press into a greased 8×8 baking dish, top with the cooled jam mixture and sprinkle the remaining topping. Bake at 350 for 30 minutes and then cool another 30-60 minutes before slicing!
Simmer the fruit and sugar stirring frequently until the strawberries begin to break up and the mixture thickens, about ten minutes.
Stir in chia seeds and simmer a few more minutes, set aside to cool.
In the meantime prepare the crust, press 3/4 of the mixture into a prepared 8×8 pan
add the jam, and sprinkle with the remaining mixture. Bake about thirty minutes and slice into squares after completely cooled!
These bars were so delicious and not overly sweet which I loved, even Dutch who was skeptical of “veggies” in his breakfast inhaled his square.

I love those bars too, but I don’t think I’ve tried a raspberry rhubarb combo. It looks delicious! I love breakfast and now I’m craving these bars even though I already had breakfast

Breakfast would most definitely be my favorite meal if I was eating the recipes in this post every day! The banana bread protein pancakes look amazing. As do the strawberry rhubarb squares (and everything else!).
I think rhubarb is a vegetable because it doesn’t have seeds…But don’t quote me on that! Either way, it’s delicious.
