I hope your weekend is off to a great start! I have had a special visitor in town this week and so far it’s been a blast.
My mom arrived on Wednesday after I got off work and we enjoyed a glass of wine while we caught up. Thursday I worked all day and then headed downtown for Thursday night live with my roommate Elyse.
We had a few drinks while listening to live music, it was so much fun!
Later in the evening we headed to Cheapside bar & grill for dinner.
I started off with my favorite, a mojito and ordered a black bean burger with sauteed veggies for dinner.
The burger was slightly spicy, super flavorful and absolutely delicious.
This morning for breakfast I made my mom one of my favorites,banana bread protein pancakes topped off with a new granola creation.
High Protein Granola
adapted from vanilla coconut granola
Ingredients:
5 tbsp brown rice syrup
2 tbsp sunflower seed butter
3 tbsp coconut oil, melted
1 3/4 c oats
2 tsp vanilla extract
1 scoop protein powder (I used sun warrior)
Directions: Combine the brown rice syrup, oil, sunflower seed butter and vanilla in a large bowl until well mixed, fold in the oats and add the rest of the ingredients stirring to coat. Once mixture is well combined pour onto a lined baking sheet and bake 22 minutes at 325 degrees stirring once. Let cool and enjoy!
This granola was extremely crunchy but not super sweet, I loved it on top of the pancakes drizzled with real maple syrup, delish!

I have to work tomorrow and then I am dog sitting for a friend for the first time! Should be interesting. lol. I love granola-especially when there are clusters involved!

I have recently become obsessed with granola! I stopped eating it for a while because I was convinced it would turn me into a whale. It’s calorie content is so high but I learned that there is nothing wrong with that! I found some organic and natural granola over at Costco that is made with amazing ingredients. So happy to have it back in my life. Even better now that I have a recipe so I can make my own!

I love granola in my yogurt. I buy this vanilla hemp seed granola that is so delicious and just a tiny bit sweet so it goes perfectly with plain yogurt.
