pumpkin ginger cookies

Happy Sunday :) I hope you all are having a wonderful, relaxing weekend! Things have been busy around here lately with midterms and unfortunately I haven’t been spending as much time as I would like in the kitchen. Although after a few hours yesterday cooking with my roommate and two successful dishes I feel refreshed. The first of my creations yielded a delicious cookie, perfect for the chilly weather we’ve been having here lately.

Sweet, spicy and chewy these cookies have the most amazing texture and delicious fall flavor.

The sugar coating gives these cookies a nice crunchy exterior & the addition of pumpkin makes them extremely moist and irresistible.

Questions: 

What is your favorite fall cookie: definitely ginger 

Best thing you did this weekend? went out with my roommate

That bite you took out of the cookies reiterates how good they look. I LOVE chewy, soft cookies. My fave cookie right now (I don’t think it’s necessarily a fall cookie, but I can’t get enough) is chocolate chip…vegan chocolate chip that is. And no one even knows they’re vegan when they’re eating them which is the best part! Happy Sunday back at ya. Time for me to get back to studying too! :P

Yum! There is just nothing better than a cookie with crispy edges but a nice chewy center! :) I don’t really have favorite cookies based on the season. I’m just a cookie monster!

The best thing I did this weekend was bowling with a group of friends! It was nice to get out of the house for a change!

This is such a great idea! I love ginger cookies and have never thought to put pumpkin in them. I’m hoping to make some with sorghum for the holidays. Maybe I’ll add some pumpkin now too!

pumpkin definitely helps keep them moist but not too fluffy I love it!

These look so good! I love molasses cookies (even though I haven’t made them recently because everyone tells me they’re too sweet…so I end up “having” to eat all of them myself!).
Adding pumpkin is a fab idea!

I love molasses too, these aren’t super sweet even though they are rolled in sugar :)

LOVE that these are made with molasses! I can totally handle molasses – I’m not as good with raw cane sugar but can easily swap in coconut sugar. Delish!
