Happy Sunday
I hope you all are having a wonderful, relaxing weekend! Things have been busy around here lately with midterms and unfortunately I haven’t been spending as much time as I would like in the kitchen. Although after a few hours yesterday cooking with my roommate and two successful dishes I feel refreshed. The first of my creations yielded a delicious cookie, perfect for the chilly weather we’ve been having here lately.
Pumpkin Ginger Cookies
adapted from two peas & their pod
Ingredients:
½ cup of earth balance, at room temperature
1/2 cup raw cane sugar, plus more for rolling the cookies
½ cup of pure pumpkin
¼ cup of unsulphured molasses
1 Tbsp flax seed + 3 tbsp warm water
1 teaspoon vanilla extract
2 ⅓ cups whole wheat pastry
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon sea salt
Directions: Preheat oven to 350 degrees. Cream together earth balance and sugar until light and fluffy. In another bowl whisk together the flax and water and let sit until a gel forms. Stir into butter mixture with vanilla, pumpkin, and molasses, stir until completely combined. In another bowl whisk together dry ingredients, fold into wet and stir until just combined. Scoop out mixture into balls and roll in cane sugar. Place on a lined baking sheet and bake about 11 minutes. Let cool completely!
Sweet, spicy and chewy these cookies have the most amazing texture and delicious fall flavor.
The sugar coating gives these cookies a nice crunchy exterior & the addition of pumpkin makes them extremely moist and irresistible.

That bite you took out of the cookies reiterates how good they look. I LOVE chewy, soft cookies. My fave cookie right now (I don’t think it’s necessarily a fall cookie, but I can’t get enough) is chocolate chip…vegan chocolate chip that is. And no one even knows they’re vegan when they’re eating them which is the best part! Happy Sunday back at ya. Time for me to get back to studying too!

This is such a great idea! I love ginger cookies and have never thought to put pumpkin in them. I’m hoping to make some with sorghum for the holidays. Maybe I’ll add some pumpkin now too!
pumpkin definitely helps keep them moist but not too fluffy I love it!

LOVE that these are made with molasses! I can totally handle molasses – I’m not as good with raw cane sugar but can easily swap in coconut sugar. Delish!
