There’s just something about stuffing your vegetables that makes the meal just a little more special. Since making my south American stuffed squash for my parents visit last month I have been constantly thinking of other flavors and combinations I could use to create more stuffed dishes. After spotting this one on pinterest last week I had been dying to make it ever since. With a few adaptations and additions I was blown away with the end result and I must admit my infatuation with stuffed squash has only continued to grow. Luckily I have a few more ideas up my sleeve I can’t wait to experiment with.
Quinoa Stuffed Acorn Squash
vegan & gluten free
adapted from for the love of food
Ingredients:
2 acorn squash
2 cups water or vegetable stock
1 cup quinoa
2 tbsp olive oil + more for drizzling
1 small red onion
2 carrots
4 ribs celery
2 cloves garlic
8oz baby bella mushrooms
1/2 tsp sage
1/2 tsp thyme
1/4 c walnuts
1/4 c fresh parsley
1 tsp sea salt
Directions: Preheat oven to 375 degrees. Cut squash in half, scrape out seeds, place in a large glass baking dish and drizzle with olive oil. Bake for 40 minutes or until tender. In the meantime bring a pot of water to a boil, stir in quinoa and let cook over low heat 15 minutes or until water is absorbed. Add olive oil to a large skillet over medium heat. Finely chop onion and saute until tender about 5 minutes, stir in finely chopped carrots and celery, cook another 3-4 minutes. Dice mushrooms and mince garlic, add to pan and cook another 5 minutes before adding in sage, walnuts, thyme, and salt. Cook a few more minutes before stirring in cooked quinoa and fresh parsley. Once squash is tender remove from the oven and fill with stuffing. Garnish with parsley and a drizzle of olive oil to serve. Serves 4 as a main dish 8 as a side.
I absolutely love the presentation of the dish and was blown away by how much the flavors in the filling resembles that of traditional stuffing.
This would be a perfect addition to your Thanksgiving menu, I’m planning on making it for my sister and I as our vegetarian main dish and make extra filling as a side dish for our guests. I can’t wait for the leftovers today, I have a feeling it they will be even better after sitting overnight!

What’s typically on your Thanksgiving menu? My grandma makes a turkey & I usually am in charge of most of the other dishes. This year cherry cookies will definitely be on our menu as well as some other new dishes I’m working on!

Can’t wait till Thanksgiving!
Yum! You know I love stuffed squash! Can’t remember if I let you know or not but I finally posted that pilaf-stuffed acorn squash I had told you about before – it was up yesterday. Can’t wait to try a stuffed squash recipe with quinoa…mmm….
Plus, love the idea of making extra filling for a side dish and using the stuffed squash as a main for vegetarians! Brilliant!
