If you follow me on twitter you probably have an idea of how excited I was to be participating in this year’s Great Food Blogger Cookie Swap, organized by Lindsay from Love & Olive Oil and Julie from The Little Kitchen. With more than 600 food bloggers involved sending 22,000 cookies around the world it was so amazing to be a part of such a great network!
I spent days thinking of the perfect vegan cookie recipe that would not only travel well but would be unique, and most importantly taste delicious. After a few trials I successfully created a vegan nog cookie that received rave reviews from everyone who got the opportunity to taste them. Flaky, soft, and slightly spiced with cinnamon and nutmeg flavor these cookies are a perfect addition to any holiday menu.
Holiday Nog Cookies
Ingredients:
for the cookies
1 cup palm shortening
3/4 cup + 2 tbsp raw cane sugar
7 tbsp coconut milk nog
2 tsp pure vanilla extract
2 1/2 cups whole wheat pastry flour
2 tsp baking soda
1/2 tsp sea salt
2 tbsp ground flax seeds
1/2 tsp cinnamon
1/4 tsp nutmeg
for the glaze
2 cups powdered sugar
1/4 cup coconut milk nog
1/2 tsp nutmeg
1/2 tsp cinnamon
Directions: Preheat oven to 350 degrees. Cream together shortening and sugar in a large bowl until light and fluffy, add in coconut milk nog, and vanilla, stir to combine. In another bowl sift together flour, flax, salt, and baking soda. Add dry to wet and mix until just combined. Drop by spoonfulls onto a lined baking sheet and bake at 350 for 10-12 minutes until lightly brown. In the meantime prepare drizzle by whisking together powdered sugar, coconut milk nog, cinnamon, and nutmeg. Drizzle over warm cookies and let cool completely on baking rack.
On my end of the swap I was excited to receive 3 very unique cookies all vegan and from wonderful bloggers which I am so happy to have been linked up with.
Up first I received these gorgeous cookies form Danni at Healthy Kitschy Vegan a classic chewy molasses cookie reminiscent of something my grandma would make. They were not only adorable but so delicious and extremely addicting!
The second box of cookies I opened were delicious salted chocolate chip cookies from Shelley at Rosewater and Thyme & they were absolutely mouthwatering. Crunchy, salty, and the perfect sweetness I seriously ate 3 of these in a row washing them down with almond milk they were so amazing!
The third box I received was cranberry and pistachio biscotti from Olivia over at The Yummy Year Project. I absolutely loved these cookies dipped in my morning coffee & the red and green made them the perfect cookie for the upcoming holiday season. I can’t wait to try her recipe out as soon as I finish the batch!
I’m sad the cookie exchange is over, but I am so happy to have participated and am not only looking forward to enjoying all of the delicious cookies, but am excited to have made some new friends through the experience. I am already looking forward to next years’ cookie swap
I’m off to the gym to squeeze in a workout then its back to studying… one more week & im done with school wooop!

Yum, I love the holiday flavours in those cookies! I haven’t seen the coconut milk nog in Canada this year, but I’ve definitely been enjoying my soy nog! We had a cookie exchange a couple of weeks ago and I brought some cherry chia carob cookies (pretty sure they were the only vegan cookies there!)
yea thats what ive been hearing although i’m soy nog would work as well & yum I love cherrys & carob together !

I noticed in the directions at the end, you mentioned maple syrup, but I didn’t see it in the ingredients. How much would be needed?
